My Seafood Paella....

SEAFOOD PAELLA


For the longest time i really wanted to cook Paella... i have this craving since i came to Dubai, UAE since most of the ingredients can be found here. But unfortunately it took me a while to cook this for various reason.

Cooking this dish took a long time from preparing to cooking.

Of course you have to have a good skillet if not a paella pan. i found mine in IKEA.

Ingredients:
  • 8 pieces mussels
  • 8 pieces clams
  • 8 pieces shrimp-separate the head set aside for soup stock
  • 2 medium size squid
  • 2 cups of rice (your own choice)
  • 1 red bell pepper
  • 1 pack of saffron -small
  • 1 tbsp of paprika
  • green peas
  • onion (medium size)
  • garlic
  • 2 shrimp cubes
  • 1-2 tbs of olive oil
  • salt and pepper to taste

How to Prepare

  • Cut and Diced onion, garlic and half of the bell pepper (the other half is for garnish)
  • clean mussels and clams and set aside
  • clean and remove the ink of the squid
  • in a small pan, add the shrimp head and 2 shrimp cubes and bring to boil and set aside

How to Cook
  • in the skillet put on the 2 tbs of olive oil.
  • saute the onion, garlic and red bell pepper
  • add the paprika
  • add the saffron still gently
  • add the rice and stir
  • then add the soup stock make sure it cover the whole pan
  • add the seafood and cover for 8-10 mins.
  • occasionally stir the pan to cover all the rice
  • once cooked, add the bell pepper for garnish and sprinkle with frozen geen peas.
